Ingredients

Cereal

  • 4 cups of oats
  • 1 cup pecans (or other desired nut)
  • 3/4 cup pepitas (raw, green pumpkin seeds)
  • 1 tsp Kosher salt (3/4 tsp iodized table salt)
  • 1 tsp cinnamon
  • 1/2 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup honey
  • 1 tsp vanilla
  • 2/3 cup dried cherries or other dried fruit
  • 1 1/2 handfuls chopped, pitted dates
  • optional 1/2 cup coconut flakes

Directions

Cereal

  1. Preheat oven to 350 degrees Fahrenheit and line a large, rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, nuts and/or seeds, salt and cinnamon. Stir to blend.
  3. Pour in the coconut oil, maple syrup and/or honey and vanilla. Mix well, until every oat and nut is lightly coated.
  4. Feel free to add more of anything you see is lacking, this recipe is very much to your desired taste. Most nuts, seeds, or dried fruits will work.
  5. Pour the cereal onto your prepared pan and use a large spoon to spread it in an even layer.
  6. Bake for anywhere between 25-45 minutes, stirring and flipping cereal every 10 minutes, until the cereal has turned a consistently pleasing darker shade of gold.
  7. Let the cereal cool completely, undisturbed (at least 45 minutes).
  8. Store in an airtight container at room temperature for 1 to 2 weeks, or in a sealed freezer bag in the freezer for up to 3 months. The dried fruit can freeze solid, so let it warm to room temperature for 5-10 minutes before serving.
