Pumpkin Pie

Ingredients

Pie Crust

Filling

  • 1 sugar pie pumpkin
  • 1 cup packed brown sugar
  • 1-2 Tbsp maple syrup
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • ¼ tsp allspice
  • ¼ tsp ground cloves
  • Grated nutmeg
  • ½ cup milk
  • ¾ cup heavy cream
  • 4 eggs

Whipped Cream

  • 2 tbsp sugar
  • 1 cup heavy whipping cream
  • vanilla extract

Filling

  • 1-2 Tbsp maple syrup
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • ¼ tsp allspice
  • ¼ tsp ground cloves
  • Grated nutmeg
  • ½ cup milk
  • ¾ cup heavy cream
  • 4 eggs

Whipped Cream

  • 2 tbsp sugar
  • 1 cup heavy whipping cream
  • vanilla extract

Directions

Assembly

  1. Slice open 1 sugar pie pumpkin. Scoop out the insides and place face-down on a parchment-lined baking sheet and roast at 325°F for one hour.
  2. Remove from the oven and peel the skin off. Let cool for 2 minutes.
  3. Add 2 cups of pumpkin to a food processor along with 1 cup of packed brown sugar and 1-2 Tbsp of maple syrup. Process for about 90 seconds or until smooth.
  4. Next add 2 tsp of cinnamon, 2 tsp of ground ginger, ¼ tsp each of allspice and ground cloves, a generous grating of nutmeg, ½ a cup of milk, ¾ of a cup of heavy cream, and 4 eggs. Process for 1 minute or until smooth.
  5. Add filling to par baked pie crust and bake for 25 minutes at 400 degrees F or until crust is brown.
  6. Top with whipped cream.
  7. Serve and enjoy.
  8. Par bake pie crust at 400 degrees F.
