Ingredients

Stock

  • Celery
  • Carrots
  • Leeks
  • Parsnips
  • Turnips
  • Garlic (entire head)
  • White onions
  • Chicken spines, necks, wings or carcass
  • Vegetable or canola oil
  • Fresh thyme
  • Fresh parsley
  • Whole peppercorns
  • Neutral oil
  • Fresh ginger
  • Fresh lemongrass

Directions

Stock

  1. Chop everything into large chunks.
  2. Chip the garlic head in half.
  3. Keep skins and peels on.
  4. Brown the chicken on the bottom of a sticky large stock pot.
  5. Turn the chicken over and throw all the vegetables on until they're warmed through.
  6. Cover in cold water and bring to a low simmer for 4-12 hours.
  7. Strain through a cheese cloth.
