Ingredients
Stock
- Celery
- Carrots
- Leeks
- Parsnips
- Turnips
- Garlic (entire head)
- White onions
- Chicken spines, necks, wings or carcass
- Vegetable or canola oil
- Fresh thyme
- Fresh parsley
- Whole peppercorns
- Neutral oil
- Fresh ginger
- Fresh lemongrass
Directions
Stock
- Chop everything into large chunks.
- Chip the garlic head in half.
- Keep skins and peels on.
- Brown the chicken on the bottom of a sticky large stock pot.
- Turn the chicken over and throw all the vegetables on until they're warmed through.
- Cover in cold water and bring to a low simmer for 4-12 hours.
- Strain through a cheese cloth.
