Ingredients

Dry

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

Wet

  • 1 1/2 cup milk (or optionally 1 cup sour cream & 1/2 cup water)
  • 2 large eggs
  • 1/2 cup vegetable oil

  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

  • Maple syrup and butter, as desired, for serving

Directions

Waffles

  1. Preheat waffle iron according to manufacturer's instructions. In a large bowl, whisk 2 cups all-purpose flour, 2 tablespoons sugar, 3 teaspoons baking powder, and 1/4 teaspoon salt; set aside.
  2. In a small bowl, whisk 1 1/2 cup milk and 2 eggs; pour over flour mixture, and whisk gently to combine (don't over mix). Gently whisk in 1/2 cup vegetable oil.
  3. Cook waffles until deep brown and crisp. (For a mini waffle iron, pour about 1/8th cup of batter into center, spreading to within 1/2 inch of edges, and close; waffle will cook in 2 to 3 minutes.) Serve warm, with maple syrup and butter, as desired.
